Ajvarbogie!

Kryddstark gryta gjord på bogstek som får mycket av sin smak från ajvar relish – en klarröd röra gjord på ugnsrostad paprika.

Gör så här

  1. Ta ut köttet och låt det rumstempereras innan tillagning. Tärna ner i kuber 2 x 2 cm.
  2. Bryn köttet, löken, vitlöken och en av morötterna i smöret eller oljan tillsammans med kryddorna i en järngryta. När köttet fått fin färg tillsätt ajvar relish. Ju mer desto starkare.
  3. Tillsätt balsamvinäger, passerad tomat, soja, worchestershiresås och fyll på med vatten så att köttet och grönsakerna nästan täcks. Låt koka minst 1 timme men helst längre om du har tid.
  4. Smaka av och krydda mer om du vill. Tillsätt den andra moroten och paprikan. Låt koka ytterligare 15–20 minuter tills köttet lätt faller isär. Häll i grädde på slutet om du vill ha en rundare smak. Servera med kokt potatis eller råris och en sallad.

Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.
