Kotlettbacon

Vi brukar ofta hylla fettet som den ultimata smakbäraren, och det står vi fast vid! Men ibland kräver rätten en annan typ av textur – ett rejälare bett och en massiv köttupplevelse, med samma goda sälta och röksmak som gör bacon så gott. Vårt kotlettbacon (eller kanadensiskt bacon som det också kallas) är ett småskaligt mathantverk tillverkat av benfri, ekologisk kotlettrad från grisar uppfödda på Ragnarssons gård i Tvååker. Kotlett är en naturligt mager grisdetalj, men vi har även putsat bort fettkappan för att hålla nere på fetthalten utan att tumma på smakupplevelsen. Precis som allt vårt bacon skippar vi både socker, nitrit och konstgjorda rökaromer. Skivorna är väl tilltagna och tjockleken är cirka 3–4 mm.

Pork fat (or pig fat) is trim fat from the whole carcass. It is softer than suet and is also excellent for rendering into lard/drippings. Lard

Lard is the hardest fat on the pig, found around the kidneys. It is excellent for rendering into cooking fat (also called lard). It can also be diced to increase the fat content in sausages and pâtés. Rendered lard is perfect for frying or using as cooking fat. Pig ears are not for everyone but sometimes appear in restaurants, often as fried strips. They then get a wonderfully crispy surface and are perfect as a flavourful snack with a drink or to top pasta with. Our pig ears are delivered completely untreated, i.e. not dried. Pig box

Our pork box contains organic, flavorful and dry-aged pork. It consists of a nice mix of pork cuts and minced pork, and you'll find, for example, chops for grilling, pork belly for frying or slow-roasting, and minced meat for shaping! Lard

Add an extra dimension of flavour to your cooking with rendered lard from organic pigs from Ragnarsson's farm. Our ready-to-use lard has a butter-like consistency and a good, neutral taste. Use it in the frying pan when pan-frying potatoes and vegetables or spread it on your breakfast sandwich as a tastier and more cholesterol-friendly alternative to table margarine. Bacon

Nitrite-free, sugar-free, and without added flavourings! Together with KustCharken, we have developed what can almost be described as a bacon dream, where really good taste meets honest food craftsmanship. Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.

Bratwurst

Germany meets Halland in Gröna Gårdar's own bratwurst! Our bratwurst is seasoned with, among other things, garlic, cumin and marjoram and, just like our other sausages, has a high meat content of 79%. The bratwurst is full of flavourful pork from Erik Ragnarsson & Sofia Warefelt's farm in Halland and is, of course, free from nitrite, e-numbers, flavour enhancers or other fillers.

Salsiccia mince

Coarsely ground pork with a really delightful bite that you can easily transform into a rich salsiccia pasta or shape into juicy patties to throw on the grill! Since we have chosen to season the mince with only sea salt to let the good meat flavor take center stage, you can vary the seasoning yourself – how about the super combo of garlic, fennel and a pinch of chili flakes? As usual, the meat is organic and comes from pigs raised at Ragnarssons in Tvååker, Halland. Heavy-tongued

Pork tongue is a classic but somewhat forgotten delicacy that we highly recommend trying! It is finely textured and becomes soft and tender when cooked for a long time. You can, for example, serve it as a main course, similar to pork hock, as a sandwich topping, or as part of a buffet or charcuterie board. The tongue should preferably be brined first and then boiled. After boiling, when the tongue is still warm, peel off the skin, which is easy to do with a small knife. Pigtail

Weighing around 150g, and with only one tail per pig, this is also an item with extremely limited availability. Pig kidney

Pork kidney is a delicacy that can be flavored with cognac or Madeira. Pork kidney should be fried over high heat in a frying pan; if the heat is too low, it will release liquid and become boiled instead of fried. If you want to mellow the taste, you should soak it in milk or water for an hour before cooking. Remember to cut the kidney lengthwise and remove the tendon in the middle as well as the white membrane that may remain on the outside. Pig heart

The pig's heart is a tender cut that can almost be compared to pork tenderloin, but with a more distinct meaty flavor. The pig's heart can advantageously be seared first and then added to a stew. Alternatively, you can fry or even grill the pig's heart, but in these cases, it should first be marinated. A third way is to smoke the heart, which becomes a true delicacy! Pig's feet

Pigs' trotters have lived a secluded life, only occasionally appearing on a Christmas smorgasbord. They have a mild flavor with plenty of rind, collagen, and a little meat. They are best suited for boiling or oven-roasting. They produce a broth rich in gelatin thanks to the pig's collagen-rich rind. The trotters are sold frozen in packages with 1–2 trotters each.
