The best friend of mashed swede and pea soup! Our nitrite-free, cured pork hock is cut with both bone and rind intact, which releases incredible flavours during slow cooking. First, boil the hock in unsalted water with flavourings such as onion, bay leaf and allspice berries, then finish it off in the oven. You get not only a wonderful combination of succulent meat and crispy rind, but also a collagen-rich broth to use as a base for soups and stews.

About our meat

Our pork is organic and dry-aged, and currently only comes from Erik Ragnarsson & Sofia Warefelt's farm Kärragärde (Tvååker in Halland). These are happy pigs with free access to outdoor living and organic feed, which results in a wonderfully fine flavor in the meat. The meat is dry-aged for 4–5 days and hand-butchered at our butchery in Uddevalla. On whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which breeder the animal comes, as well as its breed and age.

Handling advice

Köttet är vakuumförpackat för bästa hållbarhet och märkt med vikt, datum och namn. För denna produkt garanterar vi en hållbarhet på minst 2 månader räknat från när du tar emot din leverans, men köttet går ofta utmärkt att använda även om bäst-före-datumet har passerat – låt därför lukten och utseendet avgöra snarare än datumet.

Rekommenderad förvaringstemperatur är -18°C för fryst kött. Tina upp i en skål med kallt vatten och tillaga direkt. Bör ej frysas om efter upptining.
