Gravad nötrulle

En garanterad succé på buffébordet eller påskmiddagen! Gravad nötrulle är dessutom väldigt enkelt att laga, men det gäller att vara ute i god tid då gravningsprocessen kräver fem dygn. Det går bra att förbereda långt i förväg då man avslutar med att frysa in köttet. I receptet har vi räknat på bufféportioner, alltså 50g kött/person.

 

Gör så här

  1. Blanda ihop socker och salt och klappa in i köttet.
  2. Lägg kött, enbär och timjan i dubbla plastpåsar.
  3. Knyt ihop påsarna och grava i kylskåpet i 5 dygn. 
  4. Vänd påsen 2 gånger per dygn.
  5. Frys in köttet över natten.
  6. Skär det frysta köttet i tunna skivor innan servering.

Together with KustCharken, we have developed what can almost be described as a bacon dream, where really good taste meets honest food craftsmanship. Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.
