Het lammfärssoppa med kidneybönor
Denna rätt passar perfekt som middag med vänner eller på en picknick i vårsolen. Servera gärna med surdegsbröd och färskost.

Gör så här

  1. Skala och tärna ner morötter, rotselleri och gul lök.
  2. Fräs färsen i lite smör tillsammans med de skalade rotfrukterna.
  3. Strimla ner vårlök och chili och lägg i grytan. Tillsätt fonden och låt koka en stund innan du tillsätter vin, crème fraiche, citron och eventuellt grädde.
  4. Koka soppan under lock i ca 15–20 minuter eller tills grönsakerna blivit mjuka.
  5. Smaka av med soya, salt och peppar.
  6. Önskas det en lite tjockare soppa så red av med lite maizena.
  7. Tillsätt bönorna precis och låt dem koka med någon minut tills de är varma, bara precis innan soppan ska ätas. Koka inte för länge, då går bönorna sönder.

Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.
