Inbakad fläskfilé med parmaskinka

En härligt somrig rätt som blir fantastisk tillsammans med stekta grönsaker och varför inte en Tsatsiki?

Gör så här

  1. Sätt ugnen på 225°.
  2. Salta och peppra fläskfilén och låt ligga i rumstemperatur i ca 10–15 minuter.
  3. Stek den i rapsolja på mycket hög värme så att den får fin färg runtomkring.
  4. Lägg ut en bit plastfolie på köksbänken och lägg skinkan på den. Täck den med krämen av soltorkade tomater, smulad fetaost och basilikablad.
  5. Rulla in fläskfilén i skinkan så tajt som möjligt med hjälp av plastfolien.
  6. Kavla ut smördegen på köksbänken och pensla kanterna med uppvispat ägg. 
  7. Rulla in fläskfilén i smördeg och lägg den i en ugnsform, skär snitt i degen och pensla den med ägg.
  8. Grädda i mitten av ugnen tills den når ca 65°. Ta ut den och låt den vila i 10 minuter innan du skär upp den.
