Köfte – turkiska biffar

Köfte är kryddiga turkiska biffar som kan tillagas och smaksättas på många olika sätt. Här serveras de med en en hägrlig tahinisås, paprikasås, pitabröd och grönsallad. Perfekt till vardag och fest!

Gör så här

  1. Blanda alla ingredienserna till biffarna och låt smeten stå i kylen minst 1 timme (gärna 4-5 timmar) så smakar biffarna ännu godare. 
  2. Forma till biffar med fuktiga händer, hetta upp olja i en stekpanna och stek dem ca 5–6 min på varje sida, tills de inte längre är råa inuti.
  3. Tahinisås: Blanda tahini, salt, citron och vitlök i en skål.
  4. Vispa tills den blir en fast massa. Lägg i yoghurt och blanda ordentligt. 
  5. Ställ i kylen i cirka 30 min innan servering.
  6. Blanda persilja i såsen precis innan servering.
  7. Paprika sås: Lägg paprikorna på ett ugnsgaller och grilla mitt i ugnen på högsta värme tills skalet svartnar, cirka 10–15 min. Låt svalna. 
  8. Skala sedan och kärna ur. Finhacka paprikaköttet. 
  9. Hetta upp 1 msk olja i en stekpanna och fräs paprikan 1 minut. 
  10. Tillsätt granatäppelsirap och vatten, låt puttra utan lock ca 10–15 min. Smaka av med salt & peppar och garnera med finhackad persilja. Gillar du hetta så kan du tillsätta chili i såsen.

Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.
