Lövbiffsstek med chili
Lövbiff lagad hel i ugn med chili, serveras med klyftpotatis, riven rotfruktsallad och bearnaisesås.

Gör så här

  1. Sätt ugnen på ca 135 °C.
  2. Tag ut köttbiten ur sin förpackning och skölj den i ljummet vatten. Låt sedan köttbiten ligga framme och bli rumstempererad.
  3. Bryn hela köttbiten i en het stekpanna med smör och olja.
  4. Lägg sedan köttbiten i en smord ugnsform. Salta mycket väl. Peppra efter behag och strö sedan hackad chili över köttet. Sätt i en stektermometer i köttet och ställ in i ugnen.
  5. Tag ut steken strax innan önskad innertemperatur är uppnådd. (55° rosaröd, 60° rosa, 65° lätt rosa).
  6. Låt vila övertäckt i en halvtimme innan servering. Skär i tunna lövbiffar.
  7. Servera med klyftpotatis, riven rotfruktsallad och bearnaisesås.
