Very flavorful and tender beef steak. The top blade is often as tender as the sirloin, and like all forequarter cuts, has a wonderful rich meaty flavor. It is best suited for grilling whole or pan-frying in two pieces. It is tender, so no marinating is needed beforehand. Slice into thin pieces after cooking. Top blade is also known as "luffarbiff" or "luffarstek" (hobo steak). In English, it is known as top blade steak, flat iron steak, or shoulder top blade steak.
