En god förrätt till helgen är en klassisk carpaccio med hyvlad ost, ruccola, och balsamvinäger. I detta recept har vi använt rostade valnötter för en lite sötare smak men det går lika bra att använda pumpafrön eller solrosfrön.

Gör så här

  1. Frys helst oxfilén (hel) några dagar innan servering och skär upp den när den är halvfrusen, då går det lättare att skära riktigt tunna skivor (blir skivorna inte tillräckligt tunna så kan man banka ut dem försiktigt med hjälp av en kastrull).
  2. Lägg det skurna köttet på en tallrik, salta och peppra.
  3. Rosta valnötterna med lite salt i en torr stekpanna tills de fått fin färg.
  4. Strimla sellerin fint och lägg på köttet tillsammans med ruccola.
  5. Hyvla över osten och ringla över olivolja och balsamvinäger.
  6. Avsluta med valnötterna och servera direkt.

Fillet of beef

Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. Roast beef fillet

The topside fillet is as rich as it is tender and is often called the "little sister" to the beef tenderloin. It is cut from the topside, which adjoins the sirloin and the fillet, and is best prepared by slicing it into thick pieces (approx. 2.5–3 cm), salting, and peppering. Hammarost cheese has been aged for approximately 20 months and evokes the culinary craftsmanship of Alpine countries, where cheese made from hay milk has a long tradition. It is precisely the milk from grass-fed animals combined with a special production method that gives the cheese its unique character. The natural rind means that some cheeses have traces of wild mold, which forms white or dark spots on the orange rind surface. This does not affect the cheese itself and is harmless.
