Just outside Nyköping, by Lake Långhalsen, lies the Ullberga farm. The farm is run by Job and Cecile according to biodynamic and organic principles with the keywords biodiversity, quality, respect, and meticulousness. Cows, sheep, and chickens all reside here, and all are raised on feed grown on-site – for the cows, this means they graze on grass all summer and hay during the winter. The milk, also known as hay milk, is then used to produce flavourful cheeses inspired by alpine countries, where hay milk has a long tradition.
In addition to all animals on the farm being raised on species-appropriate feed, great importance is placed on allowing them to express their natural behaviours. The cows live in their secure herd, retain their horns, and calves nurse for at least three months. The result is a safe environment for the animals and, of course, very good cheeses!
