Helgrillad Tri-tip med chipotle & sötpotatis

Tri-tip är en vanlig styckningsdetalj i USA och Brasilien. Den kan närmast jämföras med det som vi kallar rostlock. I detta recept helgrillar vi Tritipen i en god grillpasta och serverar med grillade Pimiento de padron, ugnsbakad sötpotatis samt en god sås.

Gör så här

  1. Mixa ingredienserna till marinaden/kryddpastan i mixer eller med stavmixer.
  2. Gnid in köttet med kryddpastan och låt vila i ca 30 minuter.
  3. Grilla köttet på båda sidorna till en innertemperaturen på ca 56–57°.
  4. Låt köttet vila i folie i ca 15 minuter innan du skär upp det.
  5. Sätt ugnen på 225°. Skala sötpotatisen och skiva den i medeltunna skivor. Lägg i en långpanna och vänd i olja. Ställ tillbaka in i ugnen i 20–25 minuter tills potatisen fått en fin färg.
  6. Grilla snabbt Pimiento de padron på den kvarvarande värmen tills även de fått fin färg. 
  7. Servera med valfri sås eller en coleslaw.
