Rökig BBQ-sås med chili och kaffe

En mustig sås som passar perfekt till grillat i sommar. Det går även bra att använda såsen som glace när man grillar köttet.

Gör så här

  1. Börja med att ta bort stjälkarna och eventuellt kärnorna på de torkade chilifrukterna. Behåller du kärnorna blir såsen hetare än om du tar bort dem.
  2. Hacka chilifrukterna fint tillsammans med lök och vitlök.
  3. Riv skalet på apelsinen på ett rivjärn och pressa ur saften ur apelsinen.
  4. Fräs de hackade chilifrukterna i lite olja och tillsätt sedan övriga ingredienser. Låt allt koka ihop till en lite tjockare glaze och smaka av med salt och peppar.
  5. Vill du ha en mer jämn sås utan klumpar går det bra att mixa såsen med en stavmixer.
  6. Servera till nygrillat kött, kanske tillsammans med lite syrlig yoghurt.

Our organic pork belly from Ragnarsson's farm is cured in a brine consisting of sea salt and water, and then hot-smoked with juniper wood chips. The bacon has a mild smoky flavour and has been sliced into slightly thicker pieces.
