Brisket is a fattier forequarter cut that is excellent for rubbing with plenty of spices and cooking slowly, preferably in a smoker, BBQ-style. The cut has the same texture as stewing beef and requires long cooking at low temperatures. It has a fat cap on both the top and bottom and a very rich meaty flavor. A grilling cut for the more advanced cook. This smaller size corresponds to approximately a quarter brisket and consists of the "point" muscle. Note!
