Grillad flankstek med ananassalsa

Nu är det dags att tända grillen och testa detta supergoda recept: Grillad flankstek med ananassalsa och smashed potatoes!

Gör så här

  1. Skala och riv ingefäran.
  2. Blanda ihop alla ingredienser till marinaden och marinera köttet i minst en timma, men gärna över natten.
  3. Tänd grillen och slå på ugnen på ca 200°.
  4. Koka de små delikatesspotatisarna med skalet på.
  5. När potatisen är klar lägg dem på en plåt med bakplåtspapper och tryck till med en sked eller gaffel.
  6. Klicka på smör och toppa med nymald svartpeppar och flingsalt.
  7. Blanda under tiden ihop hackad ananas, chili, salladslök och koriander.
  8. Pressa över lime och smaka av med salt.
  9. Låt stå i kylen en stund innan servering. Ju längre desto godare!
  10. Därefter bakar du potatisen i ugnen tills potatisen fått färg i ca 15 minuter.
  11. Grilla under tiden potatisen är i ugnen flanksteken: rare 48-52 °, medium-rare/medium 54-58 °, well done 68 °. Tänk på att köttet är ganska tunt så det går snabbt.
  12. Låt köttet vila en stund och skär sen upp skivor tvärs över muskelfibrerna.
  13. Servera köttet med potatis, ananassalsa, sallad, picklad rödlök och crème fraiche.

Rib-eye steak

Marbled, tender steak. Entrecôte is located between the chuck and the sirloin, and is one of the most marbled cuts on the animal. It is characterized by its intramuscular fat and a strip of fat in the middle. Grass-feeding gives the fat a mild and rounded flavor, and dry-aging for 7–14 days helps to concentrate the flavors in the cut. Best suited for grilling or pan-frying in slices, but can also be advantageously cooked whole. Very flavorful and tender beef steak. The top blade is often as tender as the sirloin, and like all forequarter cuts, has a wonderful rich meaty flavor. Top blade is also known as "luffarbiff" or "luffarstek" (hobo steak). In English, it is known as top blade steak, flat iron steak, or shoulder top blade steak.
