Mörande marinad med ananas

Bogstek grillad som entrecote? Grytbitar som grillspett? Ytterlår som grillskivor? Allt är möjligt med hjälp av en mörande marinad! I en del frukter finns naturligt förekommande enzymer som bryter ned vissa proteiner i kött. Detta kan vi använda för att få kött som i vanliga fall skulle kräva lång och försiktig tillagning att istället bli klara med kort tillagning på grillen. Här använder vi ananas.

Gör så här

  1. Blanda samman alla ingredienserna till marinaden i en påse eller burk/bunke med lock. 
  2. Lägg i köttet. 
  3. Låt marinera 1-5 timmar beroende på storlek och styckdetalj. 
  4. Rör om och känn på köttet ibland, så det inte blir för mjukt.
  5. Var noga med att inte marinera för länge, då blir konsistensen för lös och ”pastejig”. Prova dig fram med att tillaga mindre bitar vartefter om du är osäker. 
  6. Tag upp och torka av köttet innan du steker/grillar det.
  7. Låt vila efter tillagning innan du skär upp och serverar.

Brisket - ca 1,5 kg

Brisket, also known as point end brisket, is a relatively unknown cut in Sweden but immensely popular in the American South. Brisket is a fattier forequarter cut that is excellent for rubbing with plenty of spices and cooking slowly, preferably in a smoker, BBQ-style. The cut has the same texture as stewing beef and requires long cooking at low temperatures. It has a fat cap on both the top and bottom and a very rich meaty flavor. A grilling cut for the more advanced cook. This smaller size corresponds to approximately a quarter brisket and consists of the "point" muscle. Note! Brisket should not be confused with Oxbringa, which is a completely different cut.
