The bone broth can, of course, be enjoyed on its own or used as a base for slow-cooked dishes, where it simmers with all the flavors of the stew. But it also makes an easy start to a quick soup. Add your favorite vegetables, some spices, and perhaps something from yesterday's leftovers. Cook it all together and dinner is ready in a flash!

The fat leftover from making broth can, of course, also be saved. It's excellent for frying or deep-frying vegetables or potatoes, for example. Remove the fat once the broth has cooled and the fat has solidified, as it will be easier to scoop it out and store it in a jar. The fat then keeps for about 1–3 months in the refrigerator.

About our meat

Our lamb is organic, grass-fed meat from western Sweden. We collaborate with about 40 lamb farmers from Ekshärad in the north to Simlångsdalen in the south. These are farms that we are proud to work with, as they focus on both quality and animal welfare and nature. All animals are raised on grass and herbs, which means they grow at a moderate pace, and the meat thus has time to become marbled, flavorful, and tender. The meat is dry-aged for 7–14 days and hand-butchered at our cutting facility in Uddevalla. On whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which farmer the animal comes, as well as its sex, breed, and age.

Handling advice

Benen bör tillagas omgående eller frysas in. Hållbarhet i frys är cirka 6 månader. Tänk på att skölja benen innan användning och koka buljongen på andra uppkokets vatten. Det ger ett renare och mildare slutresultat. Den färdiga buljongen håller sig i kylskåp cirka 1 vecka och minst 6 månader i frysen. Ett fettlock överst i burken förlänger hållbarheten vid förvaring i kylskåp.

Alla ben är löspackade i livsmedelspåsar i kartongen och i och med att det levereras fryst kan det ibland bilda en klump. Vi rekommenderar då att släppa benen mot en hård yta och sedan packa om i mindre portioner.
