About our meat

Our lamb and mutton is organic, grass-fed meat from western Sweden. We collaborate with about 10 sheep and lamb breeders from Ed in the north to Onsala in the south. These are farms that we are proud to work with, as they focus on both quality and animal welfare and nature. All animals are raised on grass and herbs, which means they grow at a moderate pace and the meat therefore has time to become marbled, flavorful, and tender. The meat is dry-aged for 7–14 days and hand-cut at our butchery in Uddevalla. On whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which breeder the animal comes, as well as its gender, breed, and age.

Handling advice

Köttet är vakuumförpackat för bästa hållbarhet och märkt med ursprung, vikt, datum och namn. För denna produkt garanterar vi en hållbarhet på minst 2 månader räknat från när du tar emot din leverans, men köttet går ofta utmärkt att använda även om bäst-före-datumet har passerat – låt därför lukten och utseendet avgöra snarare än datumet.

Rekommenderad förvaringstemperatur är -18°C för fryst kött. Tina upp i en skål med kallt vatten och förvara sen kylt i max +4°C eller tillaga direkt. En tinad köttbit håller sig ca 1–3 dagar i kylen.
