From the hind leg of the sheep, we butcher the shank – a flavorful cut that also looks great on the plate. Cook at a low temperature for a longer period to allow the shank's connective tissue and fat to break down, thus releasing all the deep and wonderful flavors.

About our meat

Our lamb and mutton is organic, grass-fed meat from western Sweden. We collaborate with about 10 sheep and lamb farmers from Ed in the north to Onsala in the south. These are farms that we are proud to work with, as they focus on both quality and animal welfare. All animals are raised on grass and herbs, which means they grow at a moderate pace, allowing the meat to become marbled, flavorful, and tender. The meat is dry-aged for 7–14 days and hand-butchered at our cutting facility in Uddevalla. On whole cuts (i.e., everything except ground meat), you will always find complete origin information: which farmer the animal comes from, as well as its sex, breed, and age.

Handling advice

Köttet är löspackat och märkt med ursprung, vikt, datum och namn. För denna produkt garanterar vi en hållbarhet på minst 2 månader räknat från när du tar emot din leverans, men köttet går ofta utmärkt att använda även om bäst-före-datumet har passerat – låt därför lukten och utseendet avgöra snarare än datumet.

Rekommenderad förvaringstemperatur är -18°C för fryst kött. Tina upp i en skål med kallt vatten och förvara sen kylt i max +4°C eller tillaga direkt. Upptinat kött håller sig ca 1–3 dagar i kylen.
