Just outside Nyköping, by Lake Långhalsen, lies the Ullberga farm. The farm is run by Job and Cecile according to biodynamic and organic principles, guided by the keywords biodiversity, quality, respect, and meticulousness. It is home to cows, sheep, and chickens, all of whom are raised on feed grown on-site – for the cows, this means they eat grass all summer and hay during the winter. From the milk, also known as hay milk, flavorful cheeses are then produced, inspired by Alpine countries where hay milk has a long tradition.
In addition to all the animals on the farm being raised on species-appropriate feed, great emphasis is placed on allowing them to engage in their natural behaviors. The cows live in their secure herd, retain their horns, and calves suckle for at least three months. The result is a safe environment for the animals and, of course, very delicious cheeses!
