Beef
Our beef is organic, grass-fed from about 40 farms around western Sweden. These are farms we are proud to work with, as they focus on both quality and animal welfare and nature conservation. All animals are raised on grass and herbs, which means they grow at a moderate pace, allowing the meat to become marbled, flavorful, and tender. The meat is dry-aged for 7–14 days and hand-cut at our butchery in Uddevalla. For whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which breeder the animal comes.
Lamb
Our lamb is organic, grass-fed from about 10 farms around western Sweden. These are farms we are proud to work with, as they focus on both quality and animal welfare and nature conservation. Pork
Our pork is organic and dry-aged, and currently comes only from Erik Ragnarsson & Sofia Warefelt's farm Kärragärde (Tvååker in Halland). These are happy pigs with free access to the outdoors and an organic feed that gives the meat a fantastically fine flavor. The meat is dry-aged for 4–5 days and hand-cut at our butchery in Uddevalla. For whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which breeder the animal comes, as well as its breed and age.
