Pork tongue is a classic but somewhat forgotten delicacy that we highly recommend trying! It is finely textured and becomes soft and tender when cooked for a long time. You can, for example, serve it as a main course, similar to pork hock, as a sandwich topping, or as part of a buffet or charcuterie board. The tongue should preferably be brined first and then boiled. After boiling, when the tongue is still warm, peel off the skin, which is easy to do with a small knife.

About our meat

Our pork is organic and dry-aged, and currently only comes from Erik Ragnarsson & Sofia Warefelt's farm Kärragärde (Tvååker in Halland). These are happy pigs with free access to outdoor space and organic feed, which gives the meat a wonderfully fine flavour. The meat is dry-aged for 4–5 days and butchered by hand at our butchery in Uddevalla. On all whole cuts (i.e. everything except mince) you will always find complete origin information: from which breeder the animal comes, as well as its breed and age.

Handling advice

Allt kött är infryst direkt efter styckning. Hållbarheten är 8 månader från packdatum för hela detaljer och 6 månader för färs.

Alla detaljer samt färsen i boxarna är vakuumförpackade för bästa hållbarhet. Detaljerna är märkta med ursprung, vikt, datum och namn. Färsen kommer i 500-gramsförpackningar.

Rekommenderad förvaringstemperatur är -18°C för fryst kött. Tina gärna upp köttet i kallt vatten, eller långsamt i kylskåpet över natten. En tinad köttbit håller sig ca 1–3 dagar i kylen.
