A new favorite for your cheese board? The popular Hammarosten cheese from Ullberga gård is now available in a slightly smaller size – perfect for a smaller gathering or for those who just want to try it to see if it's the cheese for you. Hammarosten offers notes of caramelized butter, hazelnut, and flowers, with a light saltiness. It is inspired by the culinary craftsmanship of the Alpine countries, where cheese made from hay milk has a long tradition.

The natural rind means that some cheeses have traces of wild mold, which forms white or dark spots on the orange smear layer. This does not affect the cheese itself and is harmless.

PLEASE NOTE – short shelf life! To reduce food waste, we are now selling a limited batch of Hammarosten with a 10% discount. The best-before date is May 10, 2026 – but as you probably know, many products often remain good even after this date. As long as it smells, tastes, and looks okay, it is perfectly safe to eat. About our meat

Just outside Nyköping, by Lake Långhalsen, lies the Ullberga farm. The farm is run by Job and Cecile according to biodynamic and organic principles, guided by biodiversity, quality, respect, and meticulousness. It is home to cows, sheep, and chickens, all raised on feed grown on-site – for the cows, this means they graze on grass all summer and hay during the winter. From their milk, also known as hay milk, flavorful cheeses are produced, inspired by Alpine countries where hay milk has a long tradition.

In addition to all animals on the farm being raised on species-appropriate feed, great importance is placed on allowing them to engage in their natural behaviors. The cows live in their secure herd, retain their horns, and calves suckle for at least three months. The result is a safe environment for the animals and, of course, very good cheeses!

Handling advice

Alla våra ostar levereras vakuumförpackade.

Den hela osten mår utmärkt av att lagras, då smaken blir djupare och konsistensen går från krämig till fastare. Tänk då på att låta den ligga i max 8 °C i obruten förpackning och kika till den emellanåt så att förpackningen är intakt. Osten kan utan problem lagras i upp till ett år i obruten förpackning. Om förpackningen skadas och luft kommer in, finns det risk att osten möglar eller torkar på ytan. Mögel på ost är inte farligt, utan hanteras bäst genom att man skär bort möglet med god marginal och genast packar om eller äter upp den resterande biten av osten.

Innan osten skall ätas mår den fint av att ligga i rumstemperatur i ½–1 timme. Värmen gör att smakerna mognar fram och konsistensen blir något mjukare. Om du får en bit ost över går det sedan utmärkt att grovriva och frysa in.

Tänk även på att förvara påbörjad ost i smörgåspapper eller i en ostkupa. Förvaring i plastpåsar kan göra att osten förlorar sina egenskaper på grund av bland annat kondens och för tillsluten förvaring.
