Lamb fillet is a very small cut and is best suited as a stylish starter or served with other cuts and accompaniments, for example from the grill. Grill or fry whole at a high temperature to get a good sear, then finish in the oven at a low temperature. Season with Mediterranean spices such as lemon, thyme, rosemary or mint.

About our meat

Our lamb is organic, grass-fed meat from western Sweden. We collaborate with around 40 lamb farmers from Ekshärad in the north to Simlångsdalen in the south. These are farms that we are proud to work with, as they focus on both quality and the care of animals and nature. All animals are raised on grass and herbs, which means they grow at a suitable pace, and the meat thus has time to become marbled, flavorful, and tender. The meat is dry-aged for 7–14 days and hand-butchered at our cutting facility in Uddevalla. On whole cuts (i.e., everything except mince), you will always find complete origin information: from which farmer the animal comes, as well as its sex, breed, and age.

Handling advice

Köttet är vakuumförpackat för bästa hållbarhet och märkt med ursprung, vikt, datum och namn. För denna produkt garanterar vi en hållbarhet på minst 2 månader räknat från när du tar emot din leverans, men köttet går ofta utmärkt att använda även om bäst-före-datumet har passerat – låt därför lukten och utseendet avgöra snarare än datumet.

Rekommenderad förvaringstemperatur är -18°C för fryst kött. Tina upp i en skål med kallt vatten och förvara sen kylt i max +4°C eller tillaga direkt. Upptinat kött håller sig ca 1–3 dagar i kylen.
