Lamb kidneys are (unfortunately) not as common an ingredient in Swedish cooking as they once were, when all parts of the animal needed to be utilized. However, they are considered a delicacy in many other countries and are well worth trying! Flambé them in cognac, as in France, or make a pasta with herbs and garlic, as in Italy! Generally, lamb kidneys are best cooked by searing at high heat or on the grill.

About our meat

Our lamb is organic, grass-fed meat from western Sweden. We collaborate with around 10 lamb farmers from Ed in the north to Onsala in the south. These are farms that we are proud to work with, as they focus on both quality and the care of animals and nature. All animals are raised on grass and herbs, which means they grow at a suitable pace and the meat thus has time to become flavorful and tender. The meat is dry-aged and hand-cut at our butchery in Uddevalla. On whole cuts (i.e., everything except minced meat), you will always find complete origin information: from which farmer the animal comes, as well as its sex, breed, and age.

Handling advice

Lammdetaljer och lammfärs bör tillagas omgående eller frysas in direkt efter leverans. Lammköttet håller sig upp till 1 år fryst i -18°C. De frysta lammen är infrysta direkt efter styckning.

Alla detaljer samt färsen i boxarna är vakuumförpackade för bästa hållbarhet. Detaljerna är märkta med ursprung, vikt, datum och namn. Färsen kommer i 500-gramsförpackningar.
