The back tendon is an incredibly collagen-rich, flat, and long tendon that runs along the animal's back, from the sirloin to the ribeye. This cut truly shines if you let it cook in, for example, a bone broth, soup, or stew. Thanks to the high collagen content, the dish will have a silky and rich texture. Keep in mind that it is a naturally tough cut that requires a long cooking time; we recommend at least three hours! Once the cooking time is over, you can either discard the tendon or slice it into bite-sized pieces and return it to the pot.

About our meat

Our beef is organic, grass-fed beef from Western Sweden. We collaborate with around 40 cattle farmers, from Ekshärad in the north to Simlångsdalen in the south. We are proud to work with these farms, as they focus on both quality and care for animals and nature. All animals are raised on grass and herbs, which means they grow at a steady pace, allowing the meat to become marbled, flavourful, and tender. The meat is dry-aged for 7–14 days and hand-cut at our butchery in Uddevalla. On whole cuts (i.e., everything except mince), you will always find complete origin information: which farmer the animal comes from, as well as its sex, breed, and age.

Handling advice

Nötryggsenan levereras fryst, och skall förvaras fryst efter leverans. Tina upp innan tillagning, gärna i kylskåp över natten. Tinad nötryggsena skall ej frysas om utan att tillagas först. Nötryggsenan är vakuumförpackad för bästa hållbarhet och märkt med vikt, datum och namn. Rekommenderad förvaringstemperatur är max +4°C för färsk och -18°C för fryst nötryggsena.
