Lammgryta med quinoa och myntayoghurt

Grymt god pokébowl-inspirerad gryta på lamm- eller fårkött med quinoa, snabbpicklad rödkål och myntayoghurt. Passar lika bra till vardag som en bjudning i höstmyset! I receptet har vi tipsat om en rad olika detaljer att välja mellan beroende på tycke och smak – välj lammkött om du vill ha en mildare smak och fårkött och du föredrar lite mer stuns.

Gör så här

  1. Skär köttet i tärningar, cirka 2–3 cm. Peppra och salta och bryn dem tillsammans med lök och vitlök i smör eller olja i t.ex en gjutjärnsgryta.
  2. Tillsätt finkrossade tomater, rödvin och skalet/zest från citronen. Låt puttra på svag värme under lock i ca 2 timmar eller tills köttet är mört. Späd med vatten under tiden om det behövs. Tillsätt cocktailtomaterna mot slutet. De behöver bara bli lite mjuka. 
  3. Smaka av med pressad citron, salt och peppar.
  4. Snabbpicklad rödkål: Strimla rödkålen fint.
  5. Blanda ihop ättika, vatten, honung och salt i en skål.
  6. Lägg i rödkålen och blanda ihop. Lägg en tallrik/tyngd över rödkålsblandningen och ställ in i kylen. Ju längre den får stå, desto godare, men några timmar räcker.
  7. Myntayoghurt: Blanda alla ingredienser till yoghurtsåsen, låt stå kylt ett tag innan servering.

Fantastic slow-cooking cut! Our lamb shoulder is tender and flavorful with a multitude of uses. It's obviously excellent for various types of stews, preferably with strong spices. Also try baking it in the oven or slicing and frying it. Or grilling it whole! You can also advantageously use lamb shoulder for "Får i kål" (lamb and cabbage stew), or braise it (simmer in a little liquid in a lidded pot) on low heat, either in the oven or on the stove.
