Tenderloin, ribeye, and sirloin. In our Premium Box, we've included the most tender cuts of our grass-fed beef. It's a perfect box for those who enjoy a grilled ribeye, a rare sirloin, or a pan-fried tenderloin cooked to perfection. We believe that grass-feeding gives the meat a uniquely delicious flavor, thanks to the diverse feed and slow growth. All cuts are dry-aged for 7-14 days before butchering to further enhance the taste experience.

When you want to explore every corner of the beef world. The Beef Box contains a completely anatomical mix of our grass-fed, organic beef. You'll find mince for bolognese, tacos, and hamburgers. Stewing cuts like chuck, silverside, topside, and stewing beef for slow cooking. Roasts like topside, silverside, sirloin tip, and rump steak for your Sunday roast or picnic. And, of course, prime cuts like sirloin, ribeye, or fillet steak to fry and enjoy. The 30 kg version contains at least one of each cut available on the cow. In the 10 and 20 kg versions, you'll find one of the cuts from each category. Look up any beef recipe you like and pick a suitable piece from the box. Rib-eye steak

Marbled, tender steak. Entrecôte is located between the chuck and the sirloin, and is one of the most marbled cuts on the animal. It is characterized by its intramuscular fat and a strip of fat in the middle. Grass-feeding gives the fat a mild and rounded flavor, and dry-aging for 7–14 days helps to concentrate the flavors in the cut. Best suited for grilling or pan-frying in slices, but can also be advantageously cooked whole. Detail box

When you prefer dishes made from cuts from the entire animal. Our cuts box represents all the most common whole cuts found in beef. It's a box completely without mince, but with a fine mixture of whole beef to fry, boil, and bake in the oven. You'll find prime cuts such as sirloin or ribeye, as well as roasts of top round and silverside, and stewing meat like chuck and beef roll. All anatomically divided based on how the cuts on a cow look.

Sirloin

Classic steak. The sirloin is located on the outside of the ribs and lumbar vertebrae on the hindquarter. When we butcher it, we keep the fat cap, which contributes to the good flavor, so leave it on during cooking. The muscle fibers of the sirloin run diagonally, so pay attention when slicing the meat and make sure the cut is made across the muscle fibers. Club steak

Juicy and tender meat, fine marbling, and rich flavor from grass-fed beef – in other words, a cut that is exceptionally good on the grill! Our club steak is cut from the front part of the sirloin and borders the ribeye. To elevate the flavors to new heights, we recommend leaving the L-shaped bone and the generous fat cap on during cooking. Topside

Very flavorful and tender beef steak. The top blade is often as tender as the sirloin, and like all forequarter cuts, has a wonderful rich meaty flavor. It is best suited for grilling whole or pan-frying in two pieces. It is tender, so no marinating is needed beforehand. Slice into thin pieces after cooking. Top blade is also known as "luffarbiff" or "luffarstek" (hobo steak). In English, it is known as top blade steak, flat iron steak, or shoulder top blade steak. Flank steak

Flap steak, also known as sirloin tip, is a flavorful and easy-to-prepare cut that is best cooked on the grill, but also works well in a frying pan! It is similar to flank steak but does not necessarily need to be marinated – the quality of our flap steak makes it just as delicious with just salt and pepper. Flank steak

Hearty grilled steak. The flank steak is located next to the silverside and the brisket. This is a cut that is easy to prepare and is best suited for grilling or pan-frying whole. Feel free to marinate the meat before cooking. Flank steak is also great for slicing into a stir-fry or a stroganoff. It is also excellent minced for steak tartare thanks to its fine and deep meat flavor. Roast beef fillet

The topside fillet is as rich as it is tender and is often called the "little sister" to the beef tenderloin. It is cut from the topside, which adjoins the sirloin and the fillet, and is best prepared by slicing it into thick pieces (approx. 2.5–3 cm), salting, and peppering. Fillet of beef

The beef tenderloin is undoubtedly the most tender cut on the animal. Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. If you like tenderloin but want to broaden your horizons, we'd like to recommend our tender sirloin tip roast – also known as the beef tenderloin's little sister!
