A versatile cut of meat. The topside is most commonly associated with minute steaks, but its use extends to many dishes. Lard

Lard is the hardest fat on the pig, found around the kidneys. It is excellent for rendering into cooking fat (also called lard). It can also be diced to increase the fat content in sausages and pâtés. Rendered lard is perfect for frying or using as cooking fat.
