Chicken heart

Unknown delicacy. Chicken hearts have a mild chicken flavor, quite a lot of texture and a very mild offal taste. Chicken hearts are also a very nutrient-dense part, rich in protein, B vitamins (especially B12), zinc, selenium, and iron. Lamb shoulder

Fantastic slow-cooking cut! Our lamb shoulder is tender and flavorful with a multitude of uses. It's obviously excellent for various types of stews, preferably with strong spices. Also try baking it in the oven or slicing and frying it. Or grilling it whole! You can also advantageously use lamb shoulder for "Får i kål" (lamb and cabbage stew), or braise it (simmer in a little liquid in a lidded pot) on low heat, either in the oven or on the stove. Lamb box, sliced with bone

Anatomically composed box with naturally tender and flavorful lamb! Our grass-fed lambs are born in spring and graze on coastal meadows and islands along the Bohuslän and Halland coasts, as well as on species-rich pastures and in wooded areas in Ed, Lilla Edet, Onsala, Fjällbacka, and Ljung, throughout the summer. We only slaughter lambs in the autumn, when they are at their best. In the box, you will find sliced lamb with bone and minced lamb – perfect for both stews and grilling!

Lamb's liver

Lamb's liver has a slightly milder taste than beef liver and has similar properties to calf's liver. Slice it and pan-fry for a few minutes on each side, or roast it whole and slice afterwards. Lamb's liver also works excellently on the grill, or of course as part of hearty stews. Tip! It's easier to get uniformly thick, nice slices of frozen lamb's liver by not thawing it completely, but by slicing it when it's semi-frozen. Lamb kidney

Lamb kidneys are (unfortunately) not as common an ingredient in Swedish cooking as they once were, when all parts of the animal needed to be utilized. However, they are considered a delicacy in many other countries and are well worth trying! Flambé them in cognac, as in France, or make a pasta with herbs and garlic, as in Italy! Generally, lamb kidneys are best cooked by searing at high heat or on the grill. Leg of lamb

The largest (and most well-known?) cut on the lamb. Our boneless leg of lamb consists of several smaller roasts – including sirloin tip and top round – that would be too small to butcher individually. The leg of lamb is best roasted whole in the oven, tied, but it is also excellent sliced into centimeter-thick pieces and then pan-fried or grilled. It pairs particularly well with rosemary and garlic, but also sage, thyme, marjoram, and oregano. Liver pâté

KRAV-organic, sliceable artisan pâté made from genuine ingredients! The recipe was developed in collaboration with MälarChark, with them providing the food craftsmanship and us providing the meat from our grass-fed animals. We have chosen to make the pâté entirely from beef/organs, which are combined with ingredients such as cream and spices, with no room for sugar, E-numbers, or artificial flavor enhancers. As it is completely nitrite-free, it is also naturally gray in color.
