Nut tendon

A collagen-rich cut popular in Chinese and Vietnamese cuisine, among others. Beef Achilles tendon comes from the animal's hind shank and requires a cooking time of approximately 4 hours, resulting in a soft texture reminiscent of pork belly. If you like to broaden your horizons and try new taste experiences, this is for you. Moreover, it's a great way to take anatomical responsibility! A tip is also to check out our slightly cheaper variant: Beef back tendon. Beef back tendon is most easily prepared by boiling it for at least 3 hours and can then be sliced thinly as a side dish in stews, soups, or stir-fries. Beef tallow

Tallow is beef fat and is excellent for melting and using in cooking. Tallow naturally consists of a high proportion of saturated fat, which makes it well suited for cooking at high temperatures such as frying or deep-frying. Suet, polish

Fat at an extra lean price! The trim pieces consist of beef tallow cut into irregular pieces of approximately 20 g – 300 g, and contain traces of meat and smaller pieces of sinew. Compared to regular beef tallow, this trim is a softer fat, but it can be rendered down into frying fat – follow our guide How to render tallow, lard and suet and you'll soon have a frying fat that not only adds great flavor but is also well-suited for cooking at high temperatures! Beef brisket, also called beef plate, is our fattiest cut and is for those who love fat, slow-cooked meat with a lot of flavor! The brisket is located around the animal's ribs and is just like pork belly – layers of fat and meat. The fat content naturally varies, and the fat left over after cooking can be advantageously saved and used to fry meat and vegetables. Note! Oxbringa should not be confused with Brisket, which is a completely different cut. Degrease

Tallow in a jar – rendered and ready! If you want to use more of the fat from cattle in your cooking, but don't want to render the tallow yourself, this is the perfect product for you. The tallow comes from our grass-fed animals and naturally consists of a high proportion of saturated fat, which makes it well-suited for high-temperature cooking such as frying, deep-frying, or oven-roasting vegetables and potatoes. Our beef tallow is a collaboration with Resville Mathantverk.

Fillet of beef

The beef tenderloin is undoubtedly the most tender cut on the animal. Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. Beef cheek

As the name suggests, beef cheek comes from the cheek of the cow. It is a coarse-fibred and very flavourful part of the animal that requires a little extra care and time in preparation. The cheek is suitable for boiling or braising. It can be used instead of chuck or other stewing meat in dishes like chili, goulash, and boeuf bourguignon. Keep in mind that you'll need to double or even triple the cooking time, and it's also a good idea to marinate the meat in spices and wine for a day or so before cooking. Ox tongue

Ox or beef tongue is a tender part of the animal with a pleasantly piquant flavor. It is most easily prepared by boiling it in water with spices for 1–1 ½ hours, which makes it very tender. Ox tongue is preferably served with a sauce made from the cooking liquid and a flavorful purée of your choice. The tip of the tongue is often considered an underrated delicacy, and cold tongue in thin slices makes an excellent topping. However, the back part of the tongue may need some trimming before cooking, as it often contains a good amount of fat.
