Shin of beef

A very flavorful cut of beef that is excellent for cooking in both stews and ovens. Beef shank is slices of bone from around the knee joint of a bovine animal. The pieces also include bones, which gives dishes cooked with beef shank incredibly deep flavors. Perfect for use in a rich ossobuco! Round of beef

Really good cold cut. The roll, located between the top and outside round, contains, much like the brisket and chuck, a fair amount of connective tissue. This makes it suitable for dishes with longer cooking times, such as 'tjälknöl' (cured and slow-cooked meat). Beef brisket

Beef brisket, also called beef plate, is our fattiest cut and is for those who love fat, slow-cooked meat with a lot of flavor! The brisket is located around the animal's ribs and is just like pork belly – layers of fat and meat. The fat content naturally varies, and the fat left over after cooking can be advantageously saved and used to fry meat and vegetables. Note! Oxbringa should not be confused with Brisket, which is a completely different cut. Fillet of beef

The beef tenderloin is undoubtedly the most tender cut on the animal. Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. If you like tenderloin but want to broaden your horizons, we'd like to recommend our tender sirloin tip roast – also known as the beef tenderloin's little sister! Quick and waste-smart weekday dinner! Our hash pieces are made from our delicious cooked salt-cured beef, which has been cured in a nitrite-free brine and then sous-vide cooked by the skilled food artisans at KustCharken, finally cut into smaller, hash-friendly pieces. Supplement with fridge clear-out items such as a leftover sausage from yesterday's dinner and some sad vegetables or root vegetables, and you'll have a waste-smart and tasty hash ready in no time! Roast beef fillet

The topside fillet is as rich as it is tender and is often called the "little sister" to the beef tenderloin. It is cut from the topside, which adjoins the sirloin and the fillet, and is best prepared by slicing it into thick pieces (approx. 2.5–3 cm), salting, and peppering. Rump steak with a fat cap

A good and somewhat unusual roast, also known as picanha or rump cap. The rump steak is attached to the topside but is significantly more tender. The cut of meat also lies like a cap over the sirloin and therefore makes a good roast. Unlike other roasts, which are round or oval, the rump steak is rather triangular and is therefore excellent for stuffing. Sirloin

Classic steak. The sirloin is located on the outside of the ribs and lumbar vertebrae on the hindquarter. When we butcher it, we keep the fat cap, which contributes to the good flavor, so leave it on during cooking. The muscle fibers of the sirloin run diagonally, so pay attention when slicing the meat and make sure the cut is made across the muscle fibers. Shredded beef

Make a quick stew! Our shredded beef comes from several different cuts, such as stewing beef, silverside, topside, and chuck steak. It is cut into strips of approximately 4-5 x 2 cm. Therefore, it does not need as long to cook as, for example, stewing beef, and is excellent for use in a quicker stew or a wok. Diced bacon from grass-fed beef! Our diced beef bacon is made from brisket, which is located around the animal's ribs and is just like pork belly – layers of fat and meat. With a balanced saltiness and mild smoky flavor, our Diced Beef Bacon is a perfect substitute for pork bacon and is equally delicious in a Dutch baby pancake or as a crispy topping on baked potatoes; only your imagination sets the limits. Topside

Very flavorful and tender beef steak. The top blade is often as tender as the sirloin, and like all forequarter cuts, has a wonderful rich meaty flavor. It is best suited for grilling whole or pan-frying in two pieces. It is tender, so no marinating is needed beforehand. Slice into thin pieces after cooking. Top blade is also known as "luffarbiff" or "luffarstek" (hobo steak). In English, it is known as top blade steak, flat iron steak, or shoulder top blade steak. Cushion

The best of both worlds! In a particularly well-marbled and tender part of the chuck, you'll find zabuton, which is most often known as Denver steak on the other side of the Atlantic. It is one of the few cuts that manages to combine deep and intense beef flavor (typical of chuck) with a tenderness and marbling that brings to mind classic premium cuts. No wonder chefs and grilling experts would prefer to keep this hidden gem to themselves! It is a very exclusive cut, of which there is very little on an animal, and we have also chosen to only cut it from well-marbled animals.
