En värmande höstgryta som får puttra tills fårköttet blir riktigt, riktigt mört. Kombinationen av rustika kryddningar och långkok gör att smakerna i råvarorna får utvecklas till något utöver det vanliga. Gör så här

  1. Dela köttet i tärningar (om du inte använder färdigtärnat) och bryn köttet runt om. Om du använder en detalj med ben så spara benet!
  2. Lägg köttet och ev. ben i en stor gryta, täck köttet med vatten och låt koka upp.
  3. Skumma av.
  4. Lägg i klyftad vitkål, pepparkorn och lagerblad och salta.
  5. Låt koka på svag värme under lock i ca 2 timmar. Köttet ska vara mört.
  6. När det är ca 30 minuter kvar, lägg i strimlad savoykål.
  7. Servera i djupa fat tillsammans med mandelpotatis och toppa med storbladig persilja.
