Beef outer thigh is best in smaller pieces in a stew, and then requires a slightly longer cooking time. In stores, beef outer thigh is often sold under the names ox roast or beef roast. The best of both worlds! In a particularly well-marbled and tender part of the chuck, you'll find zabuton, which is most often known as Denver steak on the other side of the Atlantic. It is one of the few cuts that manages to combine deep and intense beef flavor (typical of chuck) with a tenderness and marbling that brings to mind classic premium cuts. No wonder chefs and grilling experts would prefer to keep this hidden gem to themselves! It is a very exclusive cut, of which there is very little on an animal, and we have also chosen to only cut it from well-marbled animals.
