Pork belly is a staple of traditional Swedish cuisine and can be served as a main course with potatoes and onion sauce, or as a side dish to dishes like kroppkakor (potato dumplings), fläskpannkaka (pork pancake), or rårakor (potato pancakes). Pork belly also bakes well in the oven or as part of a hearty stew, and of course, you should try smoking it to make your own bacon! Secrecy

Well-marbled and luxurious cut that works magic on the grill! Secreto is also known as "the pig's secret" and is a juicy and tender cut located deep in the pig's neck, embedded in fat and richly marbled. Thick ribs

The thick ribs are located on the front of the pig's ribcage. The meat is rich in marbling and surrounded by a delicious fat cap with rind. If you cook the cut slowly for a long time at low temperature, the flavors hidden in the fat and connective tissue will be released, and the meat will truly melt in your mouth. To avoid the risk of either a burnt surface or a raw interior when grilling, we recommend either pre-frying the ribs in the oven or pre-boiling them in lightly salted water to an internal temperature of 70°C. Place the meat in a good marinade and then let the embers from the grill work their magic to create a crispy surface. The best friend of mashed swede and pea soup! Our nitrite-free, cured pork hock is cut with both bone and rind intact, which releases incredible flavours during slow cooking.
