It's a perfect box for those who enjoy a grilled ribeye, a rare sirloin, or a pan-fried tenderloin cooked to perfection. Cushion

The best of both worlds! In a particularly well-marbled and tender part of the chuck, you'll find zabuton, which is most often known as Denver steak on the other side of the Atlantic. It is one of the few cuts that manages to combine deep and intense beef flavor (typical of chuck) with a tenderness and marbling that brings to mind classic premium cuts. No wonder chefs and grilling experts would prefer to keep this hidden gem to themselves! It is a very exclusive cut, of which there is very little on an animal, and we have also chosen to only cut it from well-marbled animals. Rib-eye steak

Marbled, tender steak. Entrecôte is located between the chuck and the sirloin, and is one of the most marbled cuts on the animal. It is characterized by its intramuscular fat and a strip of fat in the middle. Grass-feeding gives the fat a mild and rounded flavor, and dry-aging for 7–14 days helps to concentrate the flavors in the cut. Best suited for grilling or pan-frying in slices, but can also be advantageously cooked whole. Secrecy

Well-marbled and luxurious cut that works magic on the grill! Secreto is also known as "the pig's secret" and is a juicy and tender cut located deep in the pig's neck, embedded in fat and richly marbled. When grilled, the fat melts, giving the meat both juiciness and fantastic flavor. The quick cooking at high heat gives you a wonderfully crispy surface, while the meat retains its tenderness and juiciness. Perfect for the grill! The meat comes from pigs raised by Ragnarssons in Tvååker, Halland. Small, tender pieces from the whole animal. "Grillbitar" (grilling pieces) are not an actual cut of meat, but rather small pieces that are tender enough to be suitable for outdoor cooking in summer, for example, on a grill or a muurikka. The meat consists of trimmings from the whole animal, primarily from sirloin, ribeye, beef tenderloin, tip sirloin, chuck, and roast beef, and is cut into pieces weighing approximately 50–150g. Roast beef fillet

The topside fillet is as rich as it is tender and is often called the "little sister" to the beef tenderloin. It is cut from the topside, which adjoins the sirloin and the fillet, and is best prepared by slicing it into thick pieces (approx. 2.5–3 cm), salting, and peppering. Fillet of lamb

Lamb fillet is a very small cut and is best suited as a stylish starter or served with other cuts and accompaniments, for example from the grill. Pork collar, sliced

A very flavourful cut of pork thanks to a high proportion of intramuscular fat. The pork collar is cut from the neck – between the head and the loin – and is also sold under the name pork neck. Sirloin

Classic steak. The sirloin is located on the outside of the ribs and lumbar vertebrae on the hindquarter. When we butcher it, we keep the fat cap, which contributes to the good flavor, so leave it on during cooking. The muscle fibers of the sirloin run diagonally, so pay attention when slicing the meat and make sure the cut is made across the muscle fibers. Fillet of beef

The beef tenderloin is undoubtedly the most tender cut on the animal. Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. Hearty grilled steak. The flank steak is located next to the silverside and the brisket. This is a cut that is easy to prepare and is best suited for grilling or pan-frying whole. Very flavorful and tender beef steak. The top blade is often as tender as the sirloin, and like all forequarter cuts, has a wonderful rich meaty flavor. It is best suited for grilling whole or pan-frying in two pieces. It is tender, so no marinating is needed beforehand. Slice into thin pieces after cooking. Top blade is also known as "luffarbiff" or "luffarstek" (hobo steak). In English, it is known as top blade steak, flat iron steak, or shoulder top blade steak.
