Ground beef box 5% (fresh frozen)

Minced beef with about 5% fat content, made from cuts from the entire animal, just like our stewing beef! With slow and careful rearing, the meat from our animals gets a higher proportion of intramuscular fat, which means that our regular minced beef is fattier than mince from conventional farming. By selecting parts of the animal that do not have as much intramuscular fat, we can now offer mince with a slightly lower fat content; of course, this may vary somewhat as each animal is different. Our 5% Minced Beef Box is also flash-frozen immediately after butchering and packaging.

Beef heart, sliced

Shin of beef

Round of beef

Really good cold cut. The roll, located between the top and outside round, contains, much like the brisket and chuck, a fair amount of connective tissue. This makes it suitable for dishes with longer cooking times, such as 'tjälknöl' (cured and slow-cooked meat). Beef back ribs

The back tendon is an incredibly collagen-rich, flat, and long tendon that runs along the animal's back, from the sirloin to the ribeye. This cut truly shines if you let it cook in, for example, a bone broth, soup, or stew. Thanks to the high collagen content, the dish will have a silky and rich texture. Keep in mind that it is a naturally tough cut that requires a long cooking time; we recommend at least three hours! Once the cooking time is over, you can either discard the tendon or slice it into bite-sized pieces and return it to the pot. Nut tendon

Beef Achilles tendon comes from the animal's hind shank and requires a cooking time of approximately 4 hours, resulting in a soft texture reminiscent of pork belly. If you like to broaden your horizons and try new taste experiences, this is for you. Moreover, it's a great way to take anatomical responsibility! A tip is also to check out our slightly cheaper variant: Beef back tendon. Beef back tendon is most easily prepared by boiling it for at least 3 hours and can then be sliced thinly as a side dish in stews, soups, or stir-fries. Beef brisket, also called beef plate, is our fattiest cut and is for those who love fat, slow-cooked meat with a lot of flavor! The brisket is located around the animal's ribs and is just like pork belly – layers of fat and meat. The fat content naturally varies, and the fat left over after cooking can be advantageously saved and used to fry meat and vegetables. Note! Degrease

Tallow in a jar – rendered and ready! If you want to use more of the fat from cattle in your cooking, but don't want to render the tallow yourself, this is the perfect product for you. The tallow comes from our grass-fed animals and naturally consists of a high proportion of saturated fat, which makes it well-suited for high-temperature cooking such as frying, deep-frying, or oven-roasting vegetables and potatoes. Fillet of beef

The beef tenderloin is undoubtedly the most tender cut on the animal. Like our other cuts, it is dry-aged for 8-14 days, where the main purpose of dry-aging is not actually to affect tenderness, but rather to concentrate the flavors and reduce moisture content. Beef tenderloin is suitable for searing in thick slices, or as a whole piece. Note! The beef tenderloin consists of the head, center cut, and tail. The picture shows a piece with the tail of the beef tenderloin. Although we cannot guarantee which of these you will receive, we can promise that the beef tenderloin tastes equally good, regardless. Beef cheek

As the name suggests, beef cheek comes from the cheek of the cow. It is a coarse-fibred and very flavourful part of the animal that requires a little extra care and time in preparation. The cheek is suitable for boiling or braising. It can be used instead of chuck or other stewing meat in dishes like chili, goulash, and boeuf bourguignon. Keep in mind that you'll need to double or even triple the cooking time, and it's also a good idea to marinate the meat in spices and wine for a day or so before cooking. Ox tongue

Ox or beef tongue is a tender part of the animal with a pleasantly piquant flavor. It is most easily prepared by boiling it in water with spices for 1–1 ½ hours, which makes it very tender. Ox tongue is preferably served with a sauce made from the cooking liquid and a flavorful purée of your choice. The tip of the tongue is often considered an underrated delicacy, and cold tongue in thin slices makes an excellent topping. However, the back part of the tongue may need some trimming before cooking, as it often contains a good amount of fat.
